Full city roast (medium). Medium body. Smooth with a rich, silky mouth feel, jasmine and honeysuckle aromatics, and a wonderful lingering aftertaste. Since the late 1800's, three generations of the Ruiz family have been dedicated to producing fine coffee. Casa Ruiz is a family run estate at the base of the Baru Volcano in the Boquete region of Panama. The Ruiz family follows an environmental friendly way of growing coffee. This type of growing doesn't produce a high yield but instead provides food for birds and insects, a natural habitat for migrating birds, mulch for plants to grow and reduces the use of chemicals. Peaberry beans are carefully selected and represent only 5% of the total coffee harvest. Coffee is the dried seed from the fruit of a tree. Each fruit usually has two seeds facing each other (the flat sides of the bean). In the case of a peaberry, one small round bean develops (in the shape of a pea) rather than the usual two inside the fruit of the coffee cherry. The peaberries are a favorite among our cafes for their unique appearance, fantastic aroma, lively sweet flavor and consistency from cup to cup.
