City + roast (light). Full body. The smooth and silky mouth feel balances nicely with sweet, mild citrus and floral notes. We roast the Matalapa lighter which enables its unique flavor to pop. Matalapa was founded by Fidelia Lima, great grandmother of the current owner Vicki Ann Dalton De Diaz. Vicki takes great care in growing, harvesting and processing her coffee. The farm is situated facing the Pacific Ocean whose gentle mists and occasional strong winds help contribute to Matalapa’s unique cup profile. The coffee is grown under numerous shade trees. Some of which are mango, avocado and tropical forest (which provide habitat for a wide variety of birds).
